Happy new year everyone! I hope you all had an amazing festive season. After spending time away from Glasgow for the Christmas holiday, I decided to host a dinner party at mine to welcome the New Year with my friends. It was a great opportunity to also catch up with them as we are all usually so busy with work and our schedules don’t always create time for us to meet up.
Cooking for me is usually once a week (ah the joys of spinsterhood 😅) with easy options for my weekly ambitious healthy diet plan. For the lazy days/weeks I can’t muster up the strength to cook, deliveroo comes to the rescue with an amazing selection of 50 restaurants which can deliver meals right at my door 😋🤗. Ever ready for a challenge, I set out to step out of my comfort zone and prepare a 3 course meal for my friends.
For the first course I opted for lightly toasted Pita bread and chicken liver paté
For the main course, I went with a recipe for beef stroganoff I had tried last summer while attempting the Atkins diet. I couldn’t seem to find white rice while food shopping at Marks and Spencer and went for Basmati rice…it turned out to be quite the perfect blend. 👌🏾
For dessert, I went with one of my favs which is brownies covered in truffle chocolate sauce with ice cream on the side . It was my first time making brownies and after watching a couple of videos on You tube🙈, I was able to get it in the oven just before the first guest arrived. I was hoping for a fudgy goey finish for the brownies but an over extended stint in the shower and me momentarily forgetting I had something baking in the oven left it slightly harder than I expected, my guests testified that they loved it so I would go with that testimonial lol.
We ended the night with respective food comas chatting away, reflecting on 2016 and discussing our hopes for 2017. After the success of this dinner party, I am definitely looking forward to hosting more during the course of 2017 🍾🍸. Thanks for stopping by and enjoy the rest of your week!xx
